Since 1991 he is full professor of Biochemistry at the University of Naples “Federico II”, where he teaches Industrial Enzymology in the degree on Biomolecular and Industrial Biotechnology. Since 2002 he is component of the Ph.D. Council on Biotechnology of the University of Naples “Federico II”. Since 1990 he carried out research activity at the Department of Food Science and, since 2013, at the Department of Chemical Sciences of the University of Naples “Federico II”. In the past he carried out research activity at the Department of Biochemistry and Biophysics of the Second University of Naples, and at the Mental Health Research Institute of the University of Michigan in Ann Arbor, U.S.A.. The use of the enzyme transglutaminase both to modify peptide and protein structure and activity, as well as to produce hydrocolloidal edible films, is currently the most important field of his researches. To develop such investigations he received funds by the Ministries of Education, Health and Agriculture, by the National Research Council, by the Campania Region and by the European Union. The scientific activity is documented by more than 150 articles published on journals and books having worldwide distribution and by four patents of industrial invention. He is editor of several scientific texts, Editor-in-chief of “Journal of Biotechnology and Biomaterials” (Omics Publ. Group) and also member of the Editorial Boards of the “Open Biotechnology Journal” (Bentham Science Publ.), “Enzyme Research” (Hindawi Publ. Corporation). Since 2013 he is President of the Italian Board of the Full Professors in Biochemistry.
